Perhaps one of the most traditional foods to start or end the day with
a cup of coffee or hot chocolate has beensweet corn tamales, which vary greatly from region to region, but without a doubt, in Boyacá, their combination with curd cheese makes them very special. Doña Isabel has that special touch and an old recipe, a tradition passed down from generation to generation. Her country house near Villa de Leyva makes this activity a delight, and while she shows us the different steps of this delicacy—from taking the corn and removing the kernels, to grinding them by hand, to the skill of wrapping the dough and finally steaming it—she will also tell us stories about her family and the region, introducing us to the rural way of life with all its tasks in the garden and home. In the end, we will enjoy a delicious tamale.
